Fresh oysters
Oyster knife (a short, blunt knife specifically for shucking)
Thick kitchen towel or shucking glove

Step-by-Step Instructions:
1. Clean the oysters
Scrub the shells under cold running water with a brush to remove dirt and debris.
2. Wrap or glove up
Use a thick towel or a shucking glove to hold the oyster securely in your non-dominant hand. Keep the flat side of the oyster facing up and the hinge (pointy end) toward you.
3. Insert the knife
Wiggle the tip of your oyster knife into the hinge. This might take a bit of pressure and finesse—don’t force it too hard or you could slip.
4. Twist to pop
Once the knife is in, twist it like a key to pop the hinge open. You should feel a little pop when it releases.
5. Slide and cut
Slide the knife along the top shell to cut the adductor muscle that holds the oyster closed. Then lift off the top shell.
6. Free the oyster
Slide the knife under the oyster to detach it from the bottom shell. Be careful to keep the oyster level so you don’t spill the briny juice (the liquor), which is tasty and should be served with the oyster.
